Sneaky Chocolate Pudding {Keto-Friendly/Dairy Free/Paleo}

Ten years ago, I would have never imagined combining chocolate and avocado, but being forced to make radical diet changes opens you up to all sorts of crazy new ideas.  I created this pudding recipe for my very first blog, which is long gone, but wanted to share it with you as well.  My kids love it and it is full of healthy fat, so I’ve even given it to them for breakfast. #winning  Guess what this means? It can also be enjoyed occasionally as a keto-friendly dessert for all of my keno-diet friends!

You will Need:

  • 1 medium-sized avocado
  • 1/4-1/2 cup coconut or cashew milk
  • 1/2 c raw cacao powder
  • 2 tbsp virgin coconut oil
  • 2-4 tbsp raw honey  *Sub maple syrup if vegan and sub Lakanto for Keto*
  • 1 tsp vanilla
  • pinch sea salt
  • liquid stevia, to taste (My favorite is by Body Ecology)

To Make:

  • Add all ingredients to a high powered blender (My Vitamix has been my BFF for 9 years and counting!!) and blend until smooth.  You will need to use the tamper to get everything going.
  • Start with 1/4 cup milk and add more if you want a lighter consistency.  Use less and you’ll have a really great frosting!
  • Serve with fresh berries, chopped dark chocolate, bee pollen, granola, or any of your other favorite toppings.

Want to take it to the next level? Layer your pudding with coconut whipped cream or vanilla ice cream and make an epic parfait!
